We aren't nomads but we always stay at places with kitchens because we don't go out much for breakfast and lunch. We usually bring food we can't live without (Jane's Crazy Salt always comes with me) and do at least one grocery store visit during the trip. One thing I've found is that you never know what will be in the kitchen! We stayed at place that had no stove but a super fancy schmancy coffee/espresso machine that probably cost about as much as a conventional stove/oven.
As for exercise I love to walk and there's no better way to get to know a new city than to walk and pop into shops. My favorite thing to do.

I'm not a digital nomad, but I do travel for work & it's similar to what you described.
I'd travel to smaller cities in the US, so I'd have look for healthy foods & do workouts at the hotel.
